The creed in 1 Corinthians 15 is believed even by highly sceptical scholars to be dated within 5 years of Jesus' death.

If you're disregarding things like this you may as well through out most of ancient history. For example we have 4 main sources on Emperor Tiberias, 3 of which are written substantially later than the Gospels. We have far fewer copies of them and our earliest manuscripts of them were around 500 years later than our earliest manuscripts of the Gospels.

If you're keen to read more I'm writing a detailed piece at the moment which covers a lot of this.

Re miracles I'd recommend this.

Note, for example, “Every canonical gospel source, Mark, Q, M, L, and John, affirms the miracle-working activities of Jesus. Less friendly sources, such as Josephus and the Babylonian Talmud, also attest to Jesus as a miracle worker.” -Christopher Price (‘The Miracles of Jesus: A Historical Inquiry.’)

Why make up a Gospel to Jews written by a tax collector? Why make up Gospels written by randoms such as Mark and Luke?

The Gospels contains lots of undesigned coincidences, excessive non theological verbiage, historical and geographical precision etc etc. Thanks for sharing your thoughts and all the best!
