Hi Russ,
Some brief thoughts on the video:
1. Issue of cosmic authority- Thomas Nagel, Aldous Huxley etc have highlighted that there are strong personal reasons to not want to God to exist or least not want to believe in Him as Lord. Thus "knowing" He exists would not necessarily logically drive a response of love, humility and plea for salvation.
2. There are many psychological studies that show we hold to what we desire to believe even when faced with evidence. For eg. we could just say strong evidence for God is a hallucination if we hated Him already and couldn't live believing in Him.
3. The video misuses the word "know". God desires a loving relationship of humility on our part. Simply showing He exists in the most obvious way possible will not necessarily drive every individual to how God wants us to know Him. In a sense how we come to know Him is more important than "knowing" He exists. The Bible for eg is full of examples of people who saw God's hand in very obvious ways and refused to believe.
4. What evidence would it take for you to believe in God and have Him as Lord of your life? Think about it.. would your response really be one where you let Him be Lord?
5. This video tries to use premises which use rules of logic which transcend chemicals in the human mind to try and prove something transcendent does not exist.
6. There are plenty of arguments in natural theology which point to God's existence. Sure He doesn't make Himself shown in the most obvious way possible but that doesn't mean there's no evidence He exists.
7. To say Christianity is indistinguishable from other religions and that it is a guessing game is simply false. Christianity claims to be rooted in history so can be attacked on these grounds- some other religions don't even allow this. We could use dissimilarity, embarrassment, multiple attestation etc to point to the resurrection as I have done in a previous article. It's a guessing game to try and rely on your "rational" faculties if a product of chance.
8. God's character wills to show His traits of mercy, holiness, forgiveness, purity, redemption, creativity etc. You don't set the terms you come to Him on if He is God of the universe. Seek with an open heart and mind and you will find. To disregard these broader facts of Scripture by quoting single verses is to present an unbalanced view.
9. People are judged off what they know (eg. John 9:41 et al).
10. To say someone would not have hardened their heart towards God when given more evidence is sheer speculation. It could make people hate God more etc.
11. Faith can be reasonably and unreasonably placed. We can't lump all "faith" into these same category.
I was once an atheist. I would viciously and aggressively attack Christians. I realised I lived a contradiction. I realised Jesus was truly remarkable and left a legacy like no one else. I sought for years until I came to this place. My thoughts. It's a complex topic hopefully this helps a little. Take care Russ and all the best in your philosophical and spiritual pursuits!
